Low-Fat Skillet Potatoes
These potatoes are delicious and only have about 2 grams of fat per serving.

- 1 tablespoon olive oil
- 1 1/2 cups diced red potatoes
- 1 1/4 cups diced yellow squash
- 3/4 cup chopped onion
- 1/2 cup chopped bell pepper
Heat olive oil in a nonstick skillet over medium-high heat. Add potatoes, squash, onions and peppers. Reduce heat to low; cover. Cook, turning frequently, until potatoes are tender. Salt to taste and serve immediately.
