Kim's Bean Soup

  • 1 pound Great Northern beans
  • 1/4 pound lima beans
  • 1 ham hock
  • 1 beef knuckle bone
  • 1 medium white onion
  • 2 stalks celery whole
  • 4 cloves garlic minced
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 16-ounce cans stewed tomatoes
  • 1/4 cup chopped onions
  • 1/4 cup chopped celery
  • Fresh cilantro optional
  • Tabasco optional
  • Cooked shredded chicken, optional
  • Green onions to garnish


  • Wash both beans. Cover with water and soak overnight. Drain and cover with fresh water. Bring beans to a boil. Remove from heat and let stand 30 minutes. In another large pot, place ham hock, whole medium onion, whole celery stalks, garlic, salt and pepper. Boil 1 hour; remove celery stalks. Add beans. If necessary, add water to cover beans. Boil slowly several hours until beans are done. Add remaining ingredients; heat. Add salt to taste. Garnish Bean Soup with green onions when serving.
