Urban Country’s Fried Chicken

  • Oil for frying
  • 1 2½-pound chicken cut into pieces
  • 1 cup hot red pepper sauce
  • 2 cups self-rising flour
  • ¼ cup black pepper plus 1 teaspoon
  • 1 cup salt
  • ¼ cup garlic powder


  • In a deep fryer or a large heavy saucepan, heat oil to 350°. (Do not fill pot more than half full of oil.)
  • In a medium-size bowl, combine 1 cup water and red pepper sauce; set aside.
  • In another bowl, combine flour and ¼ cup pepper.
  • Season chicken with remaining pepper, salt and garlic powder.
  • Coat seasoned chicken in flour mixture and then dip into water mixture.
  • Coat well in flour mixture again.
  • Drop into oil, frying until golden brown.
