  • 1 10-ounce package frozen chopped spinach thawed and squeezed dry
  • cup milk or half-and-half
  • 2 cups shredded Monterey Jack cheese
  • 1 8-ounce package cream cheese softened
  • 1 14.5-ounce can Rotel tomatoes with green chiles drained
  • 1 onion shredded
  • Salt and pepper to taste
  • Garlic powder and chili powder to taste


  • Mix all ingredients in an oven-proof dish.
  • Bake at 400° for 30 to 40 minutes.
  • Serve with chips, crackers and/or pita chips.
