Tory’s Spaghetti Carbonara

Ingredients

  • 1 16-ounce package spaghetti noodles
  • 3 teaspoons olive oil divided
  • 1 pound bacon diced
  • 1 cup diced ham or prosciutto
  • 1 bunch green onions chopped
  • 1 large ripe tomato diced
  • 1 bunch fresh parsley chopped
  • 1 cup frozen green peas
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan
  • 2 egg yolks

Instructions

  • Boil spaghetti noodles in water with 1 teaspoon olive oil until al dente.
  • Drain and reserve to a large serving bowl.
  • Add remaining to 2 teaspoons olive oil to a large skillet.
  • Fry bacon until crispy; do not drain grease.
  • Add ham, green onions, tomato, parsley and green peas.
  • Stir well.
  • In a separate bowl, mix together cream, Parmesan cheese and egg yolks.
  • When bacon mixture is really hot, pour it over pasta.
  • Toss until pasta is covered.
  • Add cream mixture.
  • Stir Spaghetti Carbonara well.
