Tory’s Spaghetti Carbonara
Ingredients
- 1 16-ounce package spaghetti noodles
- 3 teaspoons olive oil divided
- 1 pound bacon diced
- 1 cup diced ham or prosciutto
- 1 bunch green onions chopped
- 1 large ripe tomato diced
- 1 bunch fresh parsley chopped
- 1 cup frozen green peas
- 1 cup heavy cream
- 1 cup freshly grated Parmesan
- 2 egg yolks
Instructions
- Boil spaghetti noodles in water with 1 teaspoon olive oil until al dente.
- Drain and reserve to a large serving bowl.
- Add remaining to 2 teaspoons olive oil to a large skillet.
- Fry bacon until crispy; do not drain grease.
- Add ham, green onions, tomato, parsley and green peas.
- Stir well.
- In a separate bowl, mix together cream, Parmesan cheese and egg yolks.
- When bacon mixture is really hot, pour it over pasta.
- Toss until pasta is covered.
- Add cream mixture.
- Stir Spaghetti Carbonara well.
