Thin-Sliced Loin Appetizer with Sour Cream Dip

  • Venison loin
  • Cotton twine
  • Vegetable oil
  • 4 green onions
  • 1 16-ounce container sour cream
  • Salt
  • White or black pepper
  • Prepared honey mustard
  • Natural wooden toothpicks


  • Preheat oven to 350 degrees.
  • Tie loin every inch with cotton twine and coat with vegetable oil.
  • Place on rack in roasting pan and roast to internal temperature of 138 degrees, about 30 to 45 minutes.
  • While loin is roasting, finely chop white part of green onions and mix into sour cream.
  • Mix in salt and pepper to taste.
  • Slice 1 tablespoon green onion tops and sprinkle on top of sour cream.
  • Refrigerate sour cream mixture until ready to serve.
  • When internal temperature of loin reaches 138 degrees, remove from oven, wrap in foil and allow to rest 15 minutes before slicing thin.
  • Spread a little honey mustard on each slice, roll and secure with a toothpick.
  • Serve with sour cream mixture on the side.
