The Murrays’ Mississippi Creole Rice

  • 1 beef bouillon cube
  • 1 pound ground beef
  • 2 small onions chopped
  • 1 red bell pepper chopped
  • 1/2 cup chopped celery
  • Butter
  • 1 can diced tomatoes 14.5-ounce
  • 2 cups cooked rice
  • salt and pepper
  • 2 tablespoons Cajun seasoning
  • Grated cheese optional


  • Dissolve bouillon cube in ½ cup hot water. Brown beef; drain and set aside. Sauté onions, bell pepper and celery in some butter. Combine bouillon, beef, cooked vegetables and remaining ingredients except cheese in a greased glass baking dish. Bake at 350° for 30 to 45 minutes. Top with cheese, if desired.
