Ingredients

  • 1 cup margarine softened
  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • ¼ tsp salt

Topping:

  • 2 cups sugar
  • 4 tbsp all-purpose flour
  • 4 eggs beaten
  • 4 tbsp freshly squeezed lemon juice
  • ½ lemon rind grated
  • Powdered sugar for topping

Instructions

  • In a bowl, combine all ingredients and mix well.
  • When soft and pliable, press into a 10×14-inch pan.
  • Bake 20 minutes at 325°

Topping:

  • In a bowl, combine sugar, flour and eggs; mix well.
  • Stir in lemon juice and rind.
  • Pour over crust.
  • Bake at 325° for 25 minutes.
  • Sprinkle with powdered sugar.
  • Cool and cut into bars.
