Tangy Lemon Bars
Ingredients
- 1 cup margarine softened
- 2 cups all-purpose flour
- ½ cup powdered sugar
- ¼ tsp salt
Topping:
- 2 cups sugar
- 4 tbsp all-purpose flour
- 4 eggs beaten
- 4 tbsp freshly squeezed lemon juice
- ½ lemon rind grated
- Powdered sugar for topping
Instructions
- In a bowl, combine all ingredients and mix well.
- When soft and pliable, press into a 10×14-inch pan.
- Bake 20 minutes at 325°
Topping:
- In a bowl, combine sugar, flour and eggs; mix well.
- Stir in lemon juice and rind.
- Pour over crust.
- Bake at 325° for 25 minutes.
- Sprinkle with powdered sugar.
- Cool and cut into bars.
