Sweet Onion Soup

  • 5 large Vidalia onions sliced thin
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1 teaspoon dried thyme leaves
  • 4 cups water
  • 1 can vegetable stock 14.5-ounce
  • 2/3 cup soy sauce
  • 1/4 cup balsamic vinegar
  • 1/2 cup steak sauce
  • 1 tablespoon sugar
  • 1/2 tablespoon black pepper
  • 1/3 cup red wine Croutons optional
  • Fresh parsley optional


  • In a nonstick skillet, brown onions in olive oil with garlic, ginger and thyme until golden brown. Add to a large pot with water, stock, soy sauce, vinegar, steak sauce, sugar and black pepper. Bring to a boil; reduce heat to low and cook 20 minutes. Cover and cook 10 more minutes. Before serving, stir in red wine and cook a few more minutes. Serve hot with croutons and garnished with parsley.
