Stephanie's "Cock of the Walk" Fried Catfish

Ingredients

  • 12 catfish fillets 4 to 5 punces each
  • 2 eggs
  • ½ cup milk
  • ½ cup flour
  • 1 ½ cups cornmeal
  • 2 teaspoons salt
  • 2 teaspoons seasoning salt
  • 1 teaspoon black pepper
  • 1 cup canola oil
  • Tartar sauce:
  • 1 cup mayonnaise
  • 1/3 cup sweet relish
  • 2 tablespoons lemon juice
  • 1 tablespoon ketchup

Instructions

  • Wash catfish fillets, cut into serving-size pieces and set aside. Whisk eggs and milk in a shallow bowl. Combine flour, cornmeal and seasonings in a zip-close bag. Dip each fillet in egg mixture, and then drop in bag to coat with cornmeal mixture. Heat oil over medium-high heat to 375° in a large skillet. Fry coated catfish pieces 3 or 4 at a time (don’t crowd in pan) until golden brown on each side. Drain on paper towels.
