  • 1 ham hock
  • 2 quarts water 8 cups
  • 2 cans tomatoes coarsely chopped, 14-ounce
  • 3 medium potatoes peeled and sliced
  • 1 can corn 8-ounce
  • 1 large onion chopped
  • 1 can butter beans
  • 1 cup sliced okra
  • Salt and pepper to taste


  • Combine all ingredients in slow cooker. Stir. Cover and cook on low 8 to 10 hours. This soup is really good with cornbread. Southern Vegetable Soup Recipe serves 8.
