Southern Peach Iced Tea

  • 3 large peaches thinly sliced (plus more for garnish if desired)
  • 2 cups sugar or more to taste
  • 1 lemon zested
  • 2 to 3 family-size tea bags
  • Fresh mint for garnish


  • In a large saucepan, combine peaches, sugar and lemon zest; add 2 cups water.
  • Bring to a light simmer.
  • Cover and continue to cook about 20 minutes, until peaches are soft.
  • Using a potato masher, mash peaches and continue simmering about 10 more minutes.
  • Strain through a mesh strainer discarding solids.
  • You should have 3 to 3½ cups peach syrup; set aside.
  • Bring 3 cups water to boil; add tea bags and remove from heat.
  • Allow tea bags to steep 10 to 15 minutes.
  • Add tea to a pitcher discarding tea bags.
  • Stir in peach syrup.
  • Add water, a cup at a time, until pitcher is full or Peach Iced Tea reaches your preferred strength and sweetness.
  • Add additional sugar, if desired.
  • Refrigerate.
  • When ready to serve, stir well, pour over ice and garnish with mint and fresh peach slices.
