Southern Peach Iced Tea
Ingredients
- 3 large peaches thinly sliced (plus more for garnish if desired)
- 2 cups sugar or more to taste
- 1 lemon zested
- 2 to 3 family-size tea bags
- Fresh mint for garnish
Instructions
- In a large saucepan, combine peaches, sugar and lemon zest; add 2 cups water.
- Bring to a light simmer.
- Cover and continue to cook about 20 minutes, until peaches are soft.
- Using a potato masher, mash peaches and continue simmering about 10 more minutes.
- Strain through a mesh strainer discarding solids.
- You should have 3 to 3½ cups peach syrup; set aside.
- Bring 3 cups water to boil; add tea bags and remove from heat.
- Allow tea bags to steep 10 to 15 minutes.
- Add tea to a pitcher discarding tea bags.
- Stir in peach syrup.
- Add water, a cup at a time, until pitcher is full or Peach Iced Tea reaches your preferred strength and sweetness.
- Add additional sugar, if desired.
- Refrigerate.
- When ready to serve, stir well, pour over ice and garnish with mint and fresh peach slices.
