Sicilian Sweet Spaghetti Sauce
Ingredients
- 1 large Spanish or sweet onion diced
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 large can whole tomatoes slightly crushed (no seasonings added)
- 3 12-ounce cans tomato paste (no seasonings added)
- 8 to 12 cups water
- Sweet basil
- 1 cup sugar
Instructions
- In a large Dutch oven, over medium heat, mix onion, garlic and oil.
- Cook until onion is just tender.
- Add tomatoes, tomato paste and water.
- Stir until thoroughly mixed.
- Sprinkle enough sweet basil to make a layer over the top of entire Dutch oven and mix.
- Add sugar; don’t be afraid, the sauce is supposed to taste sweet! (I usually use more than a cup depending on how sour the tomato paste is.)
- Serve Sicilian Sweet Spaghetti Sauce over angel hair or spaghetti.
Notes
This sweet spaghetti sauce recipe came from a Sicilian woman who used to cook in an Italian restaurant in Manhattan. She says that a young Frank Sinatra regularly requested this sauce upon his frequent visits. It is very simple and, I think, very good. If it’s good of for Sinatra, it’s good enough for me.
