Shrimp & Asparagus
Ingredients
- 1 pound fresh asparagus trimmed and cut into 1-inch pieces
- ½ cup finely chopped onions
- 2 tablespoons butter
- 2 cups cooked large shrimp peeled and deveined
- Salt and pepper
- 2 teaspoons all-purpose flour
- ½ cup half-and-half
- ½ cup grated Parmesan cheese divided
- 2 cups cooked penne pasta optional
Instructions
- In a large nonstick skillet over medium heat, sauté asparagus and onion in butter 4 minutes.
- Add shrimp; cook and stir 3 minutes or until shrimp are heated.
- Add salt and pepper to taste.
- Remove and keep warm.
- In a small bowl, combine flour and half-and-half until smooth; gradually add to the skillet.
- Bring to a boil; cook and stir about 2 minutes or until thickened.
- Stir in ¼ cup cheese.
- Remove from the heat.
- Toss pasta with shrimp mixture, then add sauce.
- Sprinkle with remaining cheese.
Notes
What’s better than a one-pot meal? One that looks like you’ve worked for hours to create. This is one of those meals! It has your protein, starch, and veggies all in one. Oh, and did I mention it’s delicious and a little fancy? We love our seafood but if your kiddos aren’t too fond of it, simply substitute chicken for the shrimp. It’s just as good. Serve with penne pasta for a deliciously complete and satisfying meal.
