Rocoto Black Bean Dip

Ingredients

  • 1 15-ounce can black beans
  • ½ cup fresh oregano
  • 2 teaspoons rocoto pepper purée available in Latin supermarkets or online
  • 1 8-ounce carton sour cream
  • Salt and pepper to taste
  • Cherry tomatoes for garnish

Instructions

  • Drain and rinse black beans; purée with oregano, pepper purée and sour cream.
  • Refrigerate 2 to 3 hours. (Best if chilled overnight allowing oregano to bloom.)
  • Garnish with chopped cherry tomatoes and oregano just before serving with pita chips.
  • Serves 8 to 10.
