Roasted Chicken with New Potatoes

  • 6 4-ounce boneless skinless chicken breasts
  • 2⁄3 cup olive oil
  • 2 teaspoons minced garlic
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon salt
  • 1⁄4 teaspoon black pepper
  • 1⁄4 cup shredded Parmesan cheese
  • 1 pound new red potatoes small, washed well


  • Preheat oven to 350°.
  • Treat a 9x13-inch baking dish with nonstick spray.
  • Wash chicken breasts and layer in dish.
  • In a small bowl, combine oil, garlic, herbs, salt and pepper.
  • Lightly coat chicken with mixture—most of it will be reserved for potatoes.
  • Sprinkle cheese over chicken.
  • In a medium bowl, coat potatoes with remaining seasoning mixture.
  • Layer potatoes over and around chicken.
  • Cover and bake 35 to 40 minutes or until chicken is cooked through.
  • Raise oven temperature to 425° and cook, uncovered, another 5 minutes or until chicken breasts are lightly browned.
