Ramp & Sausage Casserole
Ingredients
- 1 pound pork sausage browned
- 4 eggs beaten
- 2 cups milk
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 8 small potatoes sliced
- 15 ramps chopped
- 2 cups shredded Cheddar cheese
Instructions
- Brown sausage; drain. In a bowl, combine eggs, milk, garlic, salt and pepper. In a large greased baking dish, layer ½ potatoes, ½ sausage and ½ chopped ramps. Repeat layers then gently pour egg and milk mixture over top. Bake at 350° until potatoes are tender, 30 to 40 minutes. Before removing Ramp & Sausage Casserole from oven, top with cheese. Cook until cheese is melted.
