  • 1 pound pork sausage browned
  • 4 eggs beaten
  • 2 cups milk
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 small potatoes sliced
  • 15 ramps chopped
  • 2 cups shredded Cheddar cheese


  • Brown sausage; drain. In a bowl, combine eggs, milk, garlic, salt and pepper. In a large greased baking dish, layer ½ potatoes, ½ sausage and ½ chopped ramps. Repeat layers then gently pour egg and milk mixture over top. Bake at 350° until potatoes are tender, 30 to 40 minutes. Before removing Ramp & Sausage Casserole from oven, top with cheese. Cook until cheese is melted.
