  • cup packed light brown sugar
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • 1 cup chopped pecan
  • 1 stick butter softened, plus 3 tablespoons
  • 2 eggs beaten
  • Melted butter for topping
  • Powdered sugar for topping


  • In a bowl, stir together brown sugar, flour, baking powder and pecans.
  • Beat in butter and eggs until smooth.
  • Spoon batter into prepared mini muffin cups until two-thirds of the way full.
  • Bake at 350° for 20 minutes.
  • Top with melted butter and powdered sugar while still warm.
