Pecan Pie Tea Cakes
Ingredients
- 1½ cup packed light brown sugar
- 1 cup all-purpose flour
- ½ tsp baking powder
- 1 cup chopped pecan
- 1 stick butter softened, plus 3 tablespoons
- 2 eggs beaten
- Melted butter for topping
- Powdered sugar for topping
Instructions
- In a bowl, stir together brown sugar, flour, baking powder and pecans.
- Beat in butter and eggs until smooth.
- Spoon batter into prepared mini muffin cups until two-thirds of the way full.
- Bake at 350° for 20 minutes.
- Top with melted butter and powdered sugar while still warm.
