Peachy Bundt Cake

  • 1/4 cup margarine (1/2 stick)
  • ½ cup light brown sugar
  • 1 29-ounce large can peaches
  • 1/4 cup walnuts
  • 1 yellow cake mix
  • ½ cup cooking oil
  • 3 eggs
  • 1 small jar baby food peaches
  • ½ teaspoon nutmeg
  • 1 large cook and serve vanilla pudding


  • Grease Bundt cake pan.
  • Melt margarine with brown sugar (I do this in the microwave on HIGH for 1 minute).
  • Add 2 tablespoons peach juice from the canned peaches.
  • Place sliced peaches in each section of Bundt pan.
  • Sprinkle with nuts.
  • Combine remaining ingredients (using dry vanilla pudding) and beat for 3 minutes.
  • Pour over peaches and bake at 350 degrees for 45 to 50 minutes.
  • Cool 2 minutes before removing from pan.
  • Peachy Bundt Cake is delicious served with vanilla ice cream or Cool Whip.
