  • 2 cups finely chopped fresh South Carolina peaches
  • 1 1/2 cups sugar divided
  • 1 stick butter (1/2 cup) softened
  • 2 eggs
  • 4 cups flour divided
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups milk
  • 1/4 cup brown sugar
  • 1/4 cup ground pecans
  • 1/4 teaspoon cinnamon
  • 4 tablespoons cold butter


  • Preheat oven to 400°.
  • Lightly grease 24 muffin cups.
  • Place peaches in a bowl and cover with 1/2 cup sugar.
  • Mix thoroughly.
  • Allow peaches to sit 1 hour.
  • Using an electric mixer, cream 1 stick butter and remaining 1 cup sugar until smooth and pale in color, about 3 minutes.
  • Add eggs, 1 at a time, and beat until fluffy, about 2 minutes.
  • In a separate bowl, combine 3½ cups flour,baking powder and salt.
  • By hand, alternately fold in milk and flour mixture, being careful not to over mix.
  • Fold in peaches.
  • Spoon ¼ cup batter into each prepared muffin cup.
  • In a small bowl, combine remaining 1⁄2 cup flour, brown sugar, pecans and cinnamon.
  • Mix well.
  • Add 4 tablespoons cold butter.
  • Using your hands, mix until mixture resembles coarse crumb-like mixture.
  • Sprinkle 1 teaspoon crumb mixture over batter in each muffin cup.
  • Bake 15 to 20 minutes or until golden brown.
  • Serve warm with butter.
