Overnight French Toast Casserole

  • 8 eggs
  • cups milk
  • 1 tsp cinnamon
  • 2 tsp pure vanilla extract
  • 12 slices Texas Toast
  • 2 pints blueberries optional
  • 4 tbsp butter
  • 1 cup brown sugar
  • 1 8oz bottle pure maple syrup


  • In a bowl, whisk together eggs, milk, cinnamon and vanilla.
  • Tear bread into bite-size pieces and stir into egg mixture until each piece is well coated.
  • Slowly fold in blueberries.
  • Pour into greased 8½x8½-inch baking dish; set aside.
  • In a small saucepan, combine butter and brown sugar; simmer until bubbly.
  • Pour over top of bread and egg mixture in baking dish; cover with plastic wrap and place in refrigerator overnight.
  • When ready to eat, preheat oven to 400° and bake about 30 minutes until golden and bubbly.
  • Serve warm with maple syrup drizzle.
