Overnight French Toast Casserole
Ingredients
- 8 eggs
- 1½ cups milk
- 1 tsp cinnamon
- 2 tsp pure vanilla extract
- 12 slices Texas Toast
- 2 pints blueberries optional
- 4 tbsp butter
- 1 cup brown sugar
- 1 8oz bottle pure maple syrup
Instructions
- In a bowl, whisk together eggs, milk, cinnamon and vanilla.
- Tear bread into bite-size pieces and stir into egg mixture until each piece is well coated.
- Slowly fold in blueberries.
- Pour into greased 8½x8½-inch baking dish; set aside.
- In a small saucepan, combine butter and brown sugar; simmer until bubbly.
- Pour over top of bread and egg mixture in baking dish; cover with plastic wrap and place in refrigerator overnight.
- When ready to eat, preheat oven to 400° and bake about 30 minutes until golden and bubbly.
- Serve warm with maple syrup drizzle.
