Oatmeal Cranberry Walnut Cookies
Yield: approximately 3½ dozen cookies.

- ¾ cup sugar
- ¼ cup packed brown sugar
- ½ cup butter softened
- ½ teaspoon vanilla extract
- 1 egg
- ¾ cup flour
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1½ cups quick-cooking oats
- 1 cup Craisins
- 1 cup chopped walnuts
Instructions
- Preheat oven to 375°.
- Grease cookie sheets.
- In large mixing bowl, beat sugars and butter until light and fluffy.
- Add vanilla and egg; blend well.
- Stir in flour, baking soda, cinnamon and salt; mix well.
- Stir in oats, Craisins and walnuts.
- Drop by rounded teaspoonfuls onto cookie sheets 2 inches apart.
- Bake at 375° for 7 to 10 minutes or until edges are light, golden brown.
- Cool 1 minute; remove from cookie sheets.
