No Raw Eggs in my Eggnog, Please

  • 4 cups milk divided
  • 1 3.4 ounce package instant vanilla pudding
  • 1 8 ounce carton fat-free egg product thawed
  • 1 teaspoon vanilla extract
  • 1/4 cup light rum can substitute 1 teaspoon rum extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • Whipped cream optional


  • Combine 2 cups milk with pudding; beat 1 minute or until slightly thickened and smooth.
  • Add remaining 2 cups milk with remaining ingredients (except whipped cream).
  • Beat well.
  • Cover and refrigerate until serving time (at least 2 hours or overnight).
  • Serve No Raw Eggs in my Eggnog, Please Recipe topped with whipped cream and a sprinkle of nutmeg, if desired.
