Mom’s Raisin Cookies

Ingredients

  • 2 cups raisins
  • 1 cup shortening
  • cups sugar
  • 2 eggs lightly beaten
  • 1 tsp vanilla extract
  • tsp all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup chopped walnuts

Instructions

  • Combine raisins and 1 cup water in a small saucepan; bring to a boil.
  • Cook 3 minutes, remove from heat and let cool.
  • In a mixing bowl, cream shortening.
  • While continually beating, gradually add sugar.
  • Add eggs, one at a time.
  • Add vanilla.
  • Combine dry ingredients in a bowl; gradually add to creamed mixture and blend thoroughly.
  • Stir in nut and raisins.
  • Drop by teaspoonfuls 2 inches apart on greased baking sheets.
  • Bake at 350° for 12 to 14 minutes.
