Mom’s Raisin Cookies
Ingredients
- 2 cups raisins
- 1 cup shortening
- 1¾ cups sugar
- 2 eggs lightly beaten
- 1 tsp vanilla extract
- 3½ tsp all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ cup chopped walnuts
Instructions
- Combine raisins and 1 cup water in a small saucepan; bring to a boil.
- Cook 3 minutes, remove from heat and let cool.
- In a mixing bowl, cream shortening.
- While continually beating, gradually add sugar.
- Add eggs, one at a time.
- Add vanilla.
- Combine dry ingredients in a bowl; gradually add to creamed mixture and blend thoroughly.
- Stir in nut and raisins.
- Drop by teaspoonfuls 2 inches apart on greased baking sheets.
- Bake at 350° for 12 to 14 minutes.
