Mom’s Potato Salad

  • 6 medium potatoes
  • 2 teaspoons salt or to taste
  • 2 eggs boiled and chopped
  • 1 tablespoon dried onion
  • ½ cup sweet relish
  • ½ cup sliced black olives optional
  • 1 small jar red pimentos
  • 1 cup mayonnaise or to taste
  • 2 tablespoons parsley


  • Wash and boil potatoes, with skins, about 30 minutes or just until cooked through; cool.
  • When potatoes are cool enough to handle, peel and cut into ½-inch cubes.
  • Add remaining ingredients.
  • Serve Mom's Potato Salad immediately.
