  • 4 large tomatoes cubed
  • 1 pound Brie cheese torn
  • 1 cup plus 1 tablespoon olive oil divided
  • 1 cup fresh basil cut in strips
  • 3 cloves garlic minced
  • teaspoons salt divided
  • 1/2 teaspoon pepper
  • pounds linguine
  • Parmesan cheese


  • Combine tomatoes, Brie cheese, 1 cup olive oil, basil, garlic, ½ teaspoon salt and pepper. Let sit at least 2 hours at room temperature. Boil linguine with remaining 1 tablespoon oil and remaining 2 teaspoons salt for about 8 to 10 minutes. Toss with sauce and serve immediately with Parmesan cheese. Linguine with Tomato and Basil Sauce is delicious served with a hot slice of garlic French bread.
