Lemon-Braised Stuffed Chicken Breast with Spinach & Feta Cheese

Ingredients

  • 4 boneless skinless chicken breast
  • 4 tablespoons butter
  • 1 lemon juiced and zested
  • 1 pound fresh spinach
  • 2 cups feta cheese
  • 2 cups chicken broth

Instructions

  • Trim chicken breasts and cut a pocket in each for stuffing. In a pan, melt butter over medium heat; add lemon juice. Sear chicken breasts on both sides; set pan and chicken aside. In a bowl, tear up spinach; mix together with feta cheese. Stuff each chicken breast with spinach mixture and place in a baking dish. Cover and bake at 375 approximately 30 minutes or until chicken reaches 165 on the center. Place same pan used for searing chicken over medium-high heat. Add chicken broth to deglaze pan and reduce until thickened. Add zest of lemon. Pour over chicken breasts prior to serving. Serves 4 to 6.
