  • 5 medium potatoes peeled and diced
  • 2 tablespoons butter
  • 1/2 medium onion chopped
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup half and half
  • 1 teaspoon Dijon mustard
  • 1/2 cup mayonnaise
  • 4 slices bacon cooked and crumbled


  • Cook potatoes in boiling water until tender.
  • Drain and set aside.
  • Melt butter in a saucepan.
  • Sauté onions until soft.
  • Stir in flour, thyme, salt and pepper.
  • Gradually add half and half, stirring often, until sauce thickens.
  • Remove from heat; cool slightly.
  • Add mustard and mayonnaise; stir well.
  • Place potatoes in 1½-quart dish.
  • Cover with sauce and bake at 350° for 30 minutes.
  • Sprinkle with bacon just before serving Golden Potato Surprise .
