  • 2 pounds ripe peaches pitted and chopped
  • 1 small head cabbage shredded
  • 1 teaspoon salt
  • 1/2 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon freshly ground pepper
  • 4 scallions chopped
  • 1 cup toasted pecans coarsely chopped


  • Coat peaches with cooking spray and bake about 5 minutes in a hot oven on broil.
  • Cook just enough to barely brown edges.
  • Remove from oven and combine with remaining ingredients.
  • Toss to coat evenly and serve.
