Ingredients

  • 2 pounds Georgia peaches peeled and sliced thin, 6 to 8 medium
  • 1 tablespoon Lemon juice
  • 3/4 cup sugar divided
  • 4 tablespoons butter softened
  • 1 teaspoon vanilla extract
  • 1 egg beaten
  • 1 cup self-rising flour
  • 1/3 cup milk
  • Topping:
  • 1/3 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter

Instructions

  • Preheat oven to 375°.
  • Toss peaches with lemon juice and ¼ cup sugar; set aside.
  • Cream butter with remaining ½ cup sugar; add vanilla and egg.
  • Mix well.
  • Add small amounts of flour and milk alternately to creamed mixture, mixing well after each addition.
  • Pour into greased 10-inch baking dish.
  • Spoon peaches over batter.
  • Delicious served with ice cream or whipped cream.
  • Topping:
  • Combine all ingredients to form coarse crumbs; sprinkle over fruit.
  • Bake 40 to 50 minutes or until golden brown.
  • Serve warm.
