Georgia Peach Buckle
Ingredients
- 2 pounds Georgia peaches peeled and sliced thin, 6 to 8 medium
- 1 tablespoon Lemon juice
- 3/4 cup sugar divided
- 4 tablespoons butter softened
- 1 teaspoon vanilla extract
- 1 egg beaten
- 1 cup self-rising flour
- 1/3 cup milk
- Topping:
- 1/3 cup sugar
- 1/3 cup flour
- 1/4 cup butter
Instructions
- Preheat oven to 375°.
- Toss peaches with lemon juice and ¼ cup sugar; set aside.
- Cream butter with remaining ½ cup sugar; add vanilla and egg.
- Mix well.
- Add small amounts of flour and milk alternately to creamed mixture, mixing well after each addition.
- Pour into greased 10-inch baking dish.
- Spoon peaches over batter.
- Delicious served with ice cream or whipped cream.
- Topping:
- Combine all ingredients to form coarse crumbs; sprinkle over fruit.
- Bake 40 to 50 minutes or until golden brown.
- Serve warm.
