  • Cake:
  • cups flour
  • cups sugar
  • teaspoons baking soda
  • ½ teaspoon salt
  • 1 15.25-ounce can fruit cocktail
  • 2 eggs
  • ½ cup brown sugar
  • ½ cup grated coconut


  • 1 stick butter
  • 3/4 cup sugar
  • 1/2 cup evaporated milk
  • 1 tsp vanilla extract
  • 1/2 cup grated coconut



  • Sift flour, sugar, baking soda and salt.
  • Beat in juice from fruit cocktail along with the eggs.
  • Fold in fruit cocktail.
  • Pour batter into greased and floured 9x13-inch cake pan and top with brown sugar and coconut.
  • Bake at 325° for 35 to 45 minutes.


  • Mix butter, sugar and evaporated milk in a saucepan.
  • Boil 2 minutes, stirring constantly.
  • Stir in vanilla and coconut.
  • Pour over warm cake.
