Easy French Onion Soup

Ingredients

  • 1 1/2 teaspoons olive oil
  • 2 large yellow onions thinly sliced
  • 1/4 teaspoon thyme
  • 2 cups water divided
  • 2 cloves garlic
  • 2 1/2 teaspoons flour
  • 1 cup beef broth or 1 bouillon cube dissolved in 1 cup boiling water
  • 1/2 teaspoon nutmeg
  • 4 slices French bread toasted
  • 2 tablespoons grated Swiss cheese
  • 4 tablespoons Parmesan cheese

Instructions

  • Reduce heat; add garlic and saute 1 minute.
  • Add flour; cook 2 minutes.
  • Stir in broth, remaining water and nutmeg.
  • Bring to boil; skim off foam.
  • Reduce heat, cover and simmer 30 minutes.
  • Preheat boiler.
  • Place 4 heatproof bowls on baking sheet.
  • Ladle soup into bowls, top with toast and sprinkle with Swiss and Parmesan.
  • Broil 1 minute.
  • Serve immediately
