Easy French Onion Soup
Ingredients
- 1 1/2 teaspoons olive oil
- 2 large yellow onions thinly sliced
- 1/4 teaspoon thyme
- 2 cups water divided
- 2 cloves garlic
- 2 1/2 teaspoons flour
- 1 cup beef broth or 1 bouillon cube dissolved in 1 cup boiling water
- 1/2 teaspoon nutmeg
- 4 slices French bread toasted
- 2 tablespoons grated Swiss cheese
- 4 tablespoons Parmesan cheese
Instructions
- Reduce heat; add garlic and saute 1 minute.
- Add flour; cook 2 minutes.
- Stir in broth, remaining water and nutmeg.
- Bring to boil; skim off foam.
- Reduce heat, cover and simmer 30 minutes.
- Preheat boiler.
- Place 4 heatproof bowls on baking sheet.
- Ladle soup into bowls, top with toast and sprinkle with Swiss and Parmesan.
- Broil 1 minute.
- Serve immediately
