Easy Chicken Cheese Enchiladas

Ingredients

  • 1 envelope taco seasoning mix
  • 1 tablespoon olive oil
  • 1 cup water
  • 1 pound boneless skinless chicken breasts sliced
  • 1/3 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1 can green chiles
  • 1 jar salsa
  • 6 to 8 flour tortillas
  • 1 container ricotta cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  • In a skillet, combine first 8 ingredients and cook until chicken is done.
  • Working quickly, remove skillet from heat and spoon equal amounts into flour tortillas adding a spoonful of ricotta cheese.
  • Leave as much juice/sauce/drippings in the skillet as possible.
  • Place wrapped and filled tortillas in a treated glass baking dish.
  • Spoon skillet juice over top.
  • Top with cheese and bake Chicken Cheese Enchiladas at 350° until cheese is melted.
