Easy Chicken Cheese Enchiladas
Ingredients
- 1 envelope taco seasoning mix
- 1 tablespoon olive oil
- 1 cup water
- 1 pound boneless skinless chicken breasts sliced
- 1/3 cup chopped fresh cilantro
- 1/2 teaspoon salt
- 1 can green chiles
- 1 jar salsa
- 6 to 8 flour tortillas
- 1 container ricotta cheese
- 2 cups shredded Monterey Jack cheese
Instructions
- In a skillet, combine first 8 ingredients and cook until chicken is done.
- Working quickly, remove skillet from heat and spoon equal amounts into flour tortillas adding a spoonful of ricotta cheese.
- Leave as much juice/sauce/drippings in the skillet as possible.
- Place wrapped and filled tortillas in a treated glass baking dish.
- Spoon skillet juice over top.
- Top with cheese and bake Chicken Cheese Enchiladas at 350° until cheese is melted.
