Dixie Fried Chicken

  • 1 fryer chicken cut-up
  • 2 eggs beaten
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon seasoned salt
  • 2 tablespoons chopped parsley
  • ½ cup all-purpose flour
  • 2 cups Crisco oil


  • Wash chicken and set aside to dry. Combine eggs with seasonings. Coat each piece of chicken in egg mixture and then roll in flour. Heat oil in large, heavy skillet over medium heat. Fry chicken in oil 15 minutes, turn and cook 10 minutes more or until browned. Cooking time will depend on size of chicken. Cook chicken in batches ensuring that pieces do not touch. Turn chicken gently with tongs rather than a meat fork so chicken is not punctured and juices do not escape.
