  • 2 eggs beaten
  • cups chopped dates
  • ½ cup sugar
  • ½ cup water
  • ¼ cup chopped nuts


  • 1 cup shortening
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cups quick-cooking oatmeal
  • 1/2 cup chopped nuts
  • 1/2 cup coconut



  • In a saucepan, cook all ingredients together until thickened; set aside.


  • In a large bowl, mix together Dough ingredients until well blended.
  • Separate into halves.
  • Roll out dough (one half at a time) on a floured board.
  • Spread half the Date Mixture on top of each.
  • Lift with a spatula and roll like a jelly roll
  • Wrap in wax paper or plastic wrap
  • Chill until firm enough to slice.
  • Slice ¼-inch thick and bake on lightly greased cookie sheet at 350° until light brown, about 12 minutes.
  • Dough may be frozen and baked later, or cookies make be frozen.
