Crabmeat Bacon Rolls
These can be made ahead, frozen, thawed and broiled. These are always a favorite at parties.

- ½ cup tomato juice
- 1 egg well beaten
- 1 cup dried breadcrumbs
- 1/8 teaspoon each: salt and pepper
- ½ teaspoon chopped fresh parsley
- ½ teaspoon chopped celery leaves
- 1 6-ounce can crabmeat, drained and flaked
- 12 slices bacon halved
Instructions
- Mix tomato juice and egg ; add breadcrumbs, seasonings, parsley, celery leaves and crabmeat.
- Roll into finger lengths; wrap each roll with 1/2 slice bacon and fasten with toothpick.
- Broil, turning frequently, until bacon is crisp and evenly brown, about 15 minutes.
- Makes 2 dozen rolls.
