Crabmeat Bacon Rolls

These can be made ahead, frozen, thawed and broiled. These are always a favorite at parties.

  • ½ cup tomato juice
  • 1 egg well beaten
  • 1 cup dried breadcrumbs
  • 1/8 teaspoon each: salt and pepper
  • ½ teaspoon chopped fresh parsley
  • ½ teaspoon chopped celery leaves
  • 1 6-ounce can crabmeat, drained and flaked
  • 12 slices bacon halved


  • Mix tomato juice and egg ; add breadcrumbs, seasonings, parsley, celery leaves and crabmeat.
  • Roll into finger lengths; wrap each roll with 1/2 slice bacon and fasten with toothpick.
  • Broil, turning frequently, until bacon is crisp and evenly brown, about 15 minutes.
  • Makes 2 dozen rolls.
