Crab Stuffed Potatoes

  • 6 baking potatoes
  • 1 stick butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon zatarain's seasoning
  • 4 teaspoons grated onion
  • 8 ounces sour cream 1 cup
  • 1 cup shredded Cheddar cheese
  • 1 pound cup fresh crabmeat or ½frozen crabmeat


  • Bake potatoes in 350° oven until done. Cut potatoes in half lengthwise; carefully scoop out potato pulp, saving shells. To pulp, add butter, salt, pepper, Zatarain's and onion; coarsely mix. Add sour cream and blend. Fold in cheese and crabmeat. Spoon into potato shells. Bake 350° for 15 minutes. Note: Can freeze stuffed potatoes separately in freezer bags. Bake at 350° for 30 to 40 minutes or microwave 4 to 6 minutes. If microwaving, fluff potatoes with fork halfway through cooking to keep center of potato from erupting.
