  • 1 pound lump crabmeat
  • ¼ cup finely diced onion
  • 1 tablespoon mayonnaise
  • 1⁄8 teaspoon black pepper
  • 3 tablespoons finely chopped parsley
  • 1⁄8 teaspoon dry mustard
  • ¼ teaspoon Worcestershire sauce
  • 2⁄3 cup finely ground breadcrumbs
  • ¼ cup pasteurized eggs


  • In a mixing bowl, combine crabmeat, onion and mayo.
  • Mix evenly but without shredding crabmeat.
  • Add pepper, parsley, mustard and Worcestershire; mix gently.
  • Add breadcrumbs and eggs; mix until evenly distributed.
  • Form into patties and sauté in frying pan using as little oil as possible.
  • When one side is brown, turn to cook other side.
  • Serve with a sauce or as-is.
  • Makes a delicious appetizer or meal.
