Country-Fried White Fish

Ingredients

  • 1 pound white fish fillets fresh or frozen
  • 1 cup ⁄3yellow cornmeal
  • 3 cups finely crushed tortilla chips
  • 1 cup ⁄3flour
  • 2 teaspoons salt
  • 2 teaspoons paprika
  • 3 teaspoons chili powder
  • 3 teaspoons black pepper
  • 1 egg
  • 3 cups milk
  • Oil for frying

Instructions

  • Thaw frozen fish; dry with a paper towel.
  • In a shallow bowl, mix cornmeal, chips, flour, salt, paprika, chili powder and black pepper.
  • In a shallow bowl, combine egg and milk; mix well.
  • Dip fish in milk mixture and then roll in cornmeal mixture.
  • Fry in hot oil until deep brown and fish flakes with fork.
  • Drain on a paper towel before serving
