  • 1 cup finely chopped onion
  • 1 cup finely chopped carrots
  • 2 sticks butter or margarine
  • 1 cup flour
  • 1 can chicken broth 14.5-ounce
  • 3 cups grated Cheddar cheese
  • 4 cups milk 1 quart
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper


  • Saute vegetables in margarine until soft.
  • Add flour and mix until smooth.
  • Add chicken broth. Bring to a boil; reduce heat and simmer 15 minutes.
  • Add cheese and cook 10 minutes longer.
  • Add milk, salt and pepper. Heat to serving temperature.
