Ingredients

  • 3 cups ½sifted flour
  • 2 teaspoons baking soda
  • 1 teaspoons ½salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 3 cups sugar
  • 1 cup canola oil
  • 4 eggs
  • 2/3 cup water
  • 2 cups canned pumpkin
  • 1 1/2 cups chopped pecans
  • 1 cup raisins optional

Instructions

  • Mix flour, baking soda, salt, cinnamon, nutmeg, allspice and sugar in a large bowl; make a well in the center.
  • In a separate bowl, combine remaining ingredients.
  • Add to dry ingredients and blend well to make batter.
  • Pour into 3 well-greased and floured loaf pans.
  • Bake at 350° for 1 hour.
  • Cool slightly in the pan (about 10 minutes).
  • Turn out onto a wire rack and cool completely before cutting or covering and storing.
