Blueberry Pound Cake

  • 2 sticks butter softened
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour divided
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups blueberries fresh or frozen


  • Cream butter and sugar. Add eggs, 1 at a time, and beat until light and fluffy. Add vanilla. Sift 2 cups flour with salt and baking powder. Add sifted ingredients to creamed mixture and beat. Dredge berries in remaining 1 cup flour; fold into batter. Pour into a tube pan which has been buttered and coated with additional sugar. Bake at 325° for 1 hour and 15 minutes.
