Kim’s Bean Soup
Ingredients
- 1 pound Great Northern beans
- 1/4 pound lima beans
- 1 ham hock
- 1 beef knuckle bone
- 1 medium white onion
- 2 stalks celery whole
- 4 cloves garlic minced
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 2 16-ounce cans stewed tomatoes
- 1/4 cup chopped onions
- 1/4 cup chopped celery
- Fresh cilantro optional
- Tabasco optional
- Cooked shredded chicken, optional
- Green onions to garnish
Instructions
- Wash both beans. Cover with water and soak overnight. Drain and cover with fresh water. Bring beans to a boil. Remove from heat and let stand 30 minutes. In another large pot, place ham hock, whole medium onion, whole celery stalks, garlic, salt and pepper. Boil 1 hour; remove celery stalks. Add beans. If necessary, add water to cover beans. Boil slowly several hours until beans are done. Add remaining ingredients; heat. Add salt to taste. Garnish Bean Soup with green onions when serving.
