Bacon-Wrapped Stuffed Jalapeño Peppers

  • 18 large jalapeño peppers
  • 2 8-ounce packages cream cheese, softened
  • 4 large garlic cloves minced
  • 1 medium onion minced
  • 2 tablespoons finely chopped fresh cilantro
  • 1⁄2 teaspoon coarse sea salt
  • 1 pound bacon Skewers soak in water about 15 minutes


  • Heat grill to medium-high heat; place foil on grill to make cleanup a little easier.
  • Slice jalapeños lengthwise; remove and discard seeds. (If you want these to be really spicy, don’t remove the seeds.)
  • Mix cream cheese, garlic, onion, cilantro and salt until well blended; set aside.
  • Cook bacon until it is half-way done. (We cook ours the old-fashioned way but the microwave works just as well.)
  • While bacon is cooling, begin stuffing your peppers by spooning mixture into each jalapeño half.
  • Wrap a slice of bacon around each jalapeño and use a skewer to secure it in place.
  • Grill your Bacon Wrapped Stuffed Jalapeño Peppers until bacon is completely cooked (you may have to turn them several times).
  • Serve immediately or at room temperature.
