Apricot Nectar Cake

Ingredients

Cake:

  • 1 package plain yellow cake mix
  • 1 3-ounce package lemon Jell-O
  • ¾ cup canned apricot nectar
  • ¾ cup vegetable oil
  • 1 teaspoon grated lemon zest
  • 4 large eggs

Glaze:

  • 3/4 cup powdered sugar
  • 4 tbsp apricot nectar, or more if needed
  • 2 tbsp fresh lemon juice

Instructions

Cake:

  • Heat oven to 325°.
  • Spray a 12-cup Bundt pan with vegetable oil and dust with flour.
  • Place cake mix, gelatin, apricot nectar, oil, lemon zest and eggs in a mixing bowl; blend on low 1 minute.
  • Stop and scrape down the sides with a rubber spatula.
  • Increase mixer speed to medium and mix 2 to 3 minutes.
  • Batter will be thick and smooth.
  • Pour into prepared Bundt pan and bake about 40 minutes.
  • Remove cake from oven when done and cool 10 minutes.
  • While cake is cooling, prepare Glaze.

Glaze:

  • Combine all Glaze ingredients in a small saucepan and cook over medium to low heat 3 to 4 minutes until the sugar dissolves.
  • Invert cake onto serving platter and prick holes in the top with a toothpick.
  • Spoon Glaze over cake, allowing the Glaze to seep into the holes.
