Apple Puff Pancakes Recipe

These apple puff pancakes are a delicious treat.  Try them while they are still warm, straight from the oven.

Ingredients

  • 6 eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter
  • 2 apples peeled, cored and sliced
  • 3 tablespoons brown sugar

Instructions

  • Directions for Apple Puff Pancakes: Preheat oven to 425°. In a large bowl, use an electric mixer to blend eggs, milk and vanilla. Add flour, sugar, salt and cinnamon; mix just until blended and set aside. Melt butter in 9x9-inch pan, melting in oven till bubbly but not brown. Remove from oven and arrange apple slices in bottom of pan. Pour batter over apples. Sprinkle brown sugar over top. Bake 20 minutes or until puffed and lightly browned. Remove from oven and serve Apple Puff Pancakes recipe immediately.
