  • 1 1-pound block Cheddar cheese
  • 1 4-ounce jar pimento, drained (save juice)
  • 1 tablespoon sugar or Stevia
  • 1 tablespoon apple cider vinegar
  • 1 to 1½ tablespoons mayonnaise
  • 1 tablespoon finely chopped jalapeño peppers
  • 2 teaspoons hot sauce
  • Salt to taste


  • Shred cheese into a large bowl and combine with remaining ingredients; add about a teaspoon reserved pimento juice.
  • Mix well, adding more mayonnaise and pimento juice to taste.
  • If you use store-bought chopped jalapeños, consider adding some juice from the jar for extra heat.
  • Cover and refrigerate for an hour or longer before serving.
