Kahlua Cheesecake |
1 cup vanilla wafer crumbs |

| Combine crumbs and butter. Press onto bottom of a 9-inch springform pan. Chill. In a small saucepan, sprink gelatin over cold water and let stand for a minute. Turn heat to low and stir until gelatin is completely dissolved; set aside. In a large bowl, beat cream cheese and sugar until fluffy. Add evaporated milk and lemon, a little at a time, beating constantly. Continue to beat until mixture is very fluffy. Add gelatin, Kahlua and vanilla, a little a time, beating constantly. Fold in whipped cream by hand. Pour into curt and chill at least 6 hours or overnight. | |
