Kahlua Cheesecake
 

1 cup vanilla wafer crumbs
1/4 cup butter or margarine, melted
1 envelope unflavored gelatin
1/2 cup cold water
3 (8-ounce) packages cream cheese, softened
1 cup sugar
1 can evaporated milk
1 teaspoon lemon juice
1/3 cup Kahlua
1 teaspoon vanilla extrace
3/4 cup heavy (whipping) cream, whipped

 
Combine crumbs and butter. Press onto bottom of a 9-inch springform pan. Chill. In a small saucepan, sprink gelatin over cold water and let stand for a minute. Turn heat to low and stir until gelatin is completely dissolved; set aside. In a large bowl, beat cream cheese and sugar until fluffy. Add evaporated milk and lemon, a little at a time, beating constantly. Continue to beat until mixture is very fluffy. Add gelatin, Kahlua and vanilla, a little a time, beating constantly. Fold in whipped cream by hand. Pour into curt and chill at least 6 hours or overnight.
