Old-Fashioned Chocolate Pie
 

4 eggs
1 3/4 cup sugar, divided
4 tablespoons flour
4 tablespoons cocoa
2 cups milk, divided
2 tablespoons butter
1 teaspoon vanilla
1 cooked pie crust
Cream of tartar

 
Preheat oven to 375 degrees. Separate 3 eggs placing the yellows into a large bowl and the whites into a smaller bowl. Place the small bowl with the 3 egg whites into the refrigerator to cool. Add the last egg (white and yellow) to large bowl of yellows; beat. Add 1 cup milk and beat well. In another bowl, mix 3/4 cup sugar, flour, and cocoa until lumps are removed. Add to egg mixture and mix well. Pour into double boiler over medium heat. Add remaining 1 cup milk, butter and vanilla. Cook until butter is melted. Pour into pie crust and bake until firm. While pie is baking, make meringue. Remove egg whites from refrigerator. Add 1/2 cup sugar and beat until peaks form. Add remaining 1/2 cup sugar and a dash of cream of tartar; beat until stiff peaks form. Top baked pie with meringue and return to oven until meringue is golden brown.
