| These potatoes are delicious and only have about 2 grams of fat per serving. | |
1 tablespoon olive oil |

Heat olive oil in a nonstick skillet over medium-high heat. Add potatoes, squash, onions and peppers. Reduce heat to low; cover. Cook, turning frequently, until potatoes are tender. Salt to taste and serve immediately. Serves 6. |
